The Thomas Crown Affair

The bandits: Just one, Thomas Crown: the kind of slick, loaded billionaire that Bond would have become had he turned his skills to evil. Choose from either Steve McQueen in the 1968 version or Pierce Brosnan in the 1999 remake, they're both awesome.

The loot: A hugely valuable Claude Monet masterpiece, residing in one of America's most secure galleries, valued at 100 million dollars.

The plan: A masterpiece of subtle sleight-of-hand, switched suitcases, idiotic guards and supreme self-confidence. The only heist in movie history which leaves the protaganist with not a hair out of place.

Does it work? Totally, despite the efforts of a hot, female insurance investigator that won't quite let up. Still, he gets to have sex with her in both versions (again, take your pick from Faye Dunaway or Rene Russo), so it's not all bad.
