DJ BBQ's Killer Wings Recipe

“Imagine a world where these spicy bastards are free. That’s the US of A, dudes! They’re racked up on bars, ready to blow a customer’s face off. That way, they gotta buy a buttload of beer to put the fire out. Hot wings, cold beer and the hugest sporting event in the universe. It don’t get no better than that.”

Preparation time
40 mins

Ingredients for the wings

1 tbsp sea salt

1 tbsp cracked black pepper

1 tbsp onion granules

1 tbsp garlic granules

1 tbsp brown sugar

1 tbsp smoked paprika

Free-range chicken wings

Ingredients for the dip

3 garlic cloves

Handful of red chillies

Piri-piri dip

Cup of olive oil

Splash of red cider vinegar

1 tbsp honey

1 tsp salt

Lime juice

Splash of vodka

Throw all of the dry spices into a bowl and mix together with your fingers. Cut the skin joint on each wing, then pull until you feel the joint crack, keeping the wings whole. “This speeds up the cooking time,” DJ BBQ says. “And makes you feel like a bone-breakin’ badass.”

Sprinkle the spice rub over all of the chicken wings, then place them on a cooking tray. Throw them into a preheated oven set to 180°C for 35 minutes, until the chicken juices run clear. Turn the wings halfway through to even out the colour.

To make a spicy dip to accompany your wings, chop the garlic cloves and red chillies into fine strips, then add the rest of the dip ingredients and give them a good stir. Spoon over your chicken wings and receive a high five from each of your Super Bowl bros.
